Healthy and Easy Thick Minestrone Recipe
One of my downfalls when trying to lose weight is finding something quick, easy and healthy at the end of a long day. The slow cooker has become my best friend over the winter, as well as frozen veg. You can chuck all ingredients in and cook while spending time with the kids or while you’re at work. With 15 minutes prep time here is my Healthy Easy Thick Minestrone Recipe.

Cook Time: 6 Hours in Slow Cooker on High

ingredients:
- 125g shin beef, trimmed of fat and cut into fingernail size pieces
- 1 tin Borlotti beans
- 1 tin cannellini beans
- 200g Frozen Sliced mixed peppers
- 200g Frozen Sliced red onions
- 200g Frozen Sweet potato chunks
- 200g Frozen Butternut squash chunks
- 200g Frozen Diced swede
- 200g Frozen Edamame beans
- 1 beef stockpot
- 390g pack of passata with basil
- Water
- 1tsp each basil & mixed herbs
- Fry light Garlic oil
- 100g of Spaghetti snapped into small pieces
- Pepper and Salt to taste
Method:
Take your shin beef, removing all obvious fat and cut into small cube sized pieces. Place in a pan with 4 squirts of Fry Light Garlic oil and brown off the pieces. When nicely browned, put into the slow cooker.
Put each of the vegetables into the slow cooker, add the stockpot straight into the slow cooker.
Pour in the packet of passata then fill the pack with water and pour that in. Then add the herbs and seasoning to taste.
You can either add the spaghetti in before starting to cook or 20 minutes before wanting to serve depending on your preference.
Turn Slow Cooker on High and leave it to cook.
Serve and Enjoy.
I have also found this good for batch cooking to bring as lunches to work.
